Fried Calamari
A cornerstone dish of Mediterranean cuisine, the secret to giving calamari its light flavor and soft texture is to fry it quickly, no more than two minutes lest the delicate meat of the squid become tough and chewy. We lightly season and bread our calamari, then flash-fry it just until tender. Served with marinara and wasabi aioli on the side.
